We call it Cask 25 to give people in the US a sense of its age. It is made from cooked grape must matured by using the Solera method of blending, which racks the vinegar between a succession of high quality cask barrels of different sizes. The oak, cherry, ash, chestnut, mulberry, and juniper casks are former wine casks, which impart flavor into the balsamic vinegar. This multiyear refinement process in the cask barrels results in a rich assertive condiment that displays a warm brown colored Balsamic with a noticeably thick fluid consistency. You'll be able to taste and feel the difference between our aged balsamic compared to cheap substitutes that are made by adding caramel or other products.
