Our Cask 18 Aged Balsamic Vinegar is Certified IGP which stands for “protected geographical indication” by the Consorzio di Modena who verifies this vinegar was produced in Modena, Italy.

Slightly less sweet than our Cask 25, it exhibits an aroma that is penetrating & persistent with Port & Madeira undertones which produce its classic Balsamic taste!  We call it Cask 18 to give people in the US a sense of its age. It is made from cooked grape must matured by using the Solera method of blending, which racks the vinegar between a succession of high quality cask barrels of different sizes. The oak, cherry, ash, chestnut, mulberry, and juniper casks are former wine casks, which impart flavor into the balsamic vinegar. This multiyear refinement process in the cask barrels results in a rich assertive condiment that displays a warm brown colored Balsamic with a noticeably thick fluid consistency. You'll be able to taste and feel the difference between our aged balsamic compared to cheap substitutes that are made by adding caramel or other products.
