Traditional Greek Salad & Greek Dressing

Serves 4

INGREDIENTS:

Dressing

Salad

  • 1 pint cherry tomatoes, quartered
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped 
  • 1/2 red onion, chopped as preferred
  • 1 cucumber, chopped
  • 1/2 cup parsley, finely chopped
  • 1/4 cup basil leaves
  • 1 cup Olive Oil Divine Kalamata Olives
  • 2/3 cup feta cheese crumbles or blocks
  • 1 can of Anchovy strips (optional)
  • 1 lemon, halved (optional)

DIRECTIONS:

Dressing

Whisk the Greek Dressing Balsamic, Koroneiki Olive Oil, Tuscany Bread Dipping Seasoning, salt, pepper until combined.

Salad

Mix tomatoes, bell peppers, onion, cucumber, parsley, basil, olives, and feta in a bowl. Mix dressing in until everything is evenly coated. Refrigerate overnight for best results.

Optional:

  • Add 4 anchovy strips to each salad.
  • Lightly squeeze lemon over salad, then use to garnish.
  • Blend in 1/2 cup of plain Greek yogurt to the dressing for a creamy version!
