Ingredients
- ¼ cup Olive Oil Divine Smoked Chipotle Extra Virgin Olive Oil
- 3 Tbsp Cask 18 Aged Italian Traditional Balsamic Vinegar
- 2 Tbsp brown sugar or honey
- 1½–2 Tbsp Olive Oil Divine Pork Stank Rub
- 1 Tbsp Dijon mustard
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp Olive Oil Divine Pennsylvania Pepper
- ½ tsp kosher salt, or to taste
- 1–2 lbs pork tenderloin, pork chops, or pork loin
Directions
- Whisk together the Smoked Chipotle EVOO, Aged Balsamic, brown sugar/honey, mustard, pork rub, and seasonings.
- Reserve about ¼ cup of the mixture for glazing later.
- Place the pork in a bag or covered dish and pour the remaining marinade over it.
- Refrigerate 2–4 hours. For pork tenderloin, I wouldn't go much beyond 6 hours because of the balsamic.
- Remove pork from the marinade and discard the used marinade.
- Grill, roast, or smoke until the pork reaches 145°F internal temperature, then let it rest about 5 minutes.
- During the last few minutes of cooking, brush with the reserved balsamic-chipotle glaze.
