- 12 tbsp unsalted butter, melted
- 2 cups yellow cornmeal
- 1 1/2 cups all-purpose flour
- 3 tbsp of Olive Oil Divine's Fajita Seasoning
- 2 tbsp sugar
- 3 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 4 eggs
- 3 cups buttermilk
Preheat your oven to 425 degrees Fahrenheit and grease a 13x9 inch baking dish.
Mix cornmeal, flour, sugar, baking powder, baking soda, and salt.
Mix the eggs, buttermilk, and butter in a separate bowl. Pour this into the dry ingredients and fold it together until everything is wet and lumpy. Pour into dish and bake until the top is golden and a toothpick comes out of the center clean, or about 25 minutes. Let cool and serve.
