Easy Roasted Pumpkin Seeds

 

Don’t toss those pumpkin seeds! Turn them into a crunchy fall snack with just a few simple ingredients. This easy recipe is perfect after carving pumpkins and gives little kitchen helpers a fun way to turn the seeds into something delicious.

•    Roasted Walnut Oil 
•    Himalayan Pink Salt 

Ingredients
•    1½ cups fresh pumpkin seeds, cleaned 
•    1 tablespoon Olive Oil Divine Virgin Organic Avocado Oil 
•    ½ teaspoon Olive Oil Divine Himalayan Pink Salt, or to taste 
•    ¼ teaspoon garlic powder, optional 
•    Olive Oil Divine Roasted Walnut Oil, optional for finishing 

Directions
1.    Preheat oven to 325°F. 
2.    Separate the pumpkin seeds from the pulp and rinse thoroughly in a colander. 
3.    Spread the seeds onto a clean kitchen towel and pat them very dry. This is important for getting them nice and crisp. 
4.    Place the dried seeds in a bowl. Add the Virgin Organic Avocado Oil, Himalayan Pink Salt and garlic powder, if using. Toss until evenly coated. 
5.    Spread the seeds in a single layer on a baking sheet. 
6.    Roast for 20–25 minutes, stirring halfway through, until lightly golden and crisp. Begin checking them early since smaller seeds may roast more quickly. 
7.    Remove from the oven and allow to cool slightly. For an extra layer of nutty flavor, toss the warm seeds with a very light drizzle of Roasted Walnut Oil. 
8.    Cool completely before serving. The seeds will become even crunchier as they cool. 

Little Kitchen Helpers
Kids can help rinse and dry the seeds, toss them with the avocado oil and seasoning, and spread them onto the baking sheet. An adult should handle the oven and hot baking sheet.

Recipe Note
The Virgin Organic Avocado Oil is used for roasting, while the Roasted Walnut Oil is added after cooking as an optional finishing oil. We specifically recommend our avocado oil for higher-heat cooking. 

Divine Tip
Dry those seeds well before roasting. Extra moisture creates steam in the oven, which can keep your pumpkin seeds from getting as crisp and crunchy as you want them.
