- 1 lb ground chicken
- 1 large egg, beaten
- 1/2 cup Parmesan
- 2 tbsp parsley
- 1/4 tsp crushed red pepper flakes
- Kosher Salt
- Black pepper
- 3 tbsp of Olive Oil Divine's Garlic Fused Extra Virgin Olive Oil
- 2 tbsp of Olive Oil Divine's Butter Flavored Extra Virgin Olive Oil
- 1/2 lemon, juiced
- 1 lb zoodles
Mix chicken, egg, Parmesan, parsley, and red pepper flakes. Add salt and pepper, then form into meatballs.
Heat 2 tbsp Garlic EVOO in a skillet over medium heat and cook meatballs until golden and done, about 10 minutes. Be sure to cook on all sides for even doneness. Remove from skillet and wipe out skillet.
Add 2 tbsp of Butter EVOO and 1 tbsp of Garlic EVOO to the skillet. Add zoodles, stir, and then add in lemon juice. Add meatballs and warm through. Serve and top with more Parmesan.
