Shrimp Corn Chowder

  • Preheat oven to 450°F
  • Heat both oils in a large pot over medium heat, add the onions and garlic, then sauté until tender.
  • Add the corn, chicken stock, heavy cream, potatoes and Gulf Coast Bay Seasoning, cover and let boil for 25 minutes.
  • Cook bacon to desired doneness, chop and set aside.
  • Add shrimp to pot of oils already prepared, cook approximately 3 minutes, or until shrimp is pink and opaque.
  • Serve topped with bacon and scallions (optional add: bay leaves).
