Ingredients:
- 3 tbs Olive Oil Divine Butter Flavored Extra Virgin Olive Oil
- 2 tbs Olive Oil Divine Chipotle Infused Extra Virgin Olive Oil
- 1 med chopped onion
- 2 finely chopped garlic cloves
- 2 cups sweet corn
- 1/2 cup heavy cream
- 2 lbs Yukon gold potatoes, cut in small cubes
- 2 tsp Olive Oil Divine Gulf Coast Bay Seasoning
- 4-5 cups chicken stock
- 6 strips uncured bacon
- 1 lb medium shrimp, deveined
- 3 scallions, chopped
Directions:
- Preheat oven to 450°F
- Heat both oils in a large pot over medium heat, add the onions and garlic, then sauté until tender.
- Add the corn, chicken stock, heavy cream, potatoes and Gulf Coast Bay Seasoning, cover and let boil for 25 minutes.
- Cook bacon to desired doneness, chop and set aside.
- Add shrimp to pot of oils already prepared, cook approximately 3 minutes, or until shrimp is pink and opaque.
- Serve topped with bacon and scallions (optional add: bay leaves).
