- 1 lb firm Roma tomatoes, seeded and chopped
- 1 lb cucumbers, seeded and chopped
- 1/2 cup parsley
- 1 red onion, chopped
- 1 tbsp of Olive Oil Divine's Traditional Aged White Balsamic Vinegar
- 2 tbsp of Olive Oil Divine's Mission Extra Virgin Olive Oil
- 1 tbsp lemon juice
- Olive Oil Divine's Italian Seasoning (Salt Free), to taste
- Olive Oil Divine's Himalayan Pink Salt, to taste
- Black pepper, to taste
- 1 cup or less of feta cheese
- Bell peppers and olives are optional
Mix the cucumbers, parsley, onion, and tomatoes.
Whisk the vinegar, Mission EVOO, lemon juice, and any seasonings to make a dressing.
Toss this with the the first bowl's contents. Top with feta and any other toppings of choice. Let flavors mingle for 20 minutes.
