
This bright, citrus-forward Olive Oil Divine Mediterranean Caesar Dressing uses some of our favorite products to add a vibrant Mediterranean twist. It cuts through the traditional richness, utilizing the white balsamic to balance the garlic and umami flavors perfectly.

Yields: 1/2 cup
Ingredients:
- 2 tbsp Olive Oil Divine Mediterranean Lemon Aged White Balsamic Vinegar
- 1/4 cup Olive Oil Divine Lemon Fused Extra Virgin Olive Oil
- 1 tbsp mayonnaise or 1 raw egg yolk (for emulsification)
- 2 cloves garlic, finely minced or grated
- 3 to 4 anchovy fillets, finely mashed (optional, but adds authentic umami)
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/4 cup freshly grated Parmesan cheese
- Himalayan Pink Salt freshly cracked black pepper, to taste
Instructions:
- Combine the base: In a medium-sized bowl or a liquid measuring cup, vigorously whisk together the mayonnaise (or egg yolk), minced garlic, mashed anchovies, Dijon mustard, Worcestershire sauce, and your Mediterranean Lemon Aged White Balsamic Vinegar.
- Emulsify: While continuously whisking, slowly drizzle in your Lemon Fused EVOO in a thin, steady stream. Keep whisking until the mixture becomes thick and emulsified.
- Add flavor: Stir in the freshly grated Parmesan cheese.
- Season: Taste the dressing, and season with salt and pepper as needed. Add an extra squeeze of lemon juice if you prefer it extra tart.
